Ingredients
For the kebabs:
- 600g extra-firm tofu
- 120g plant-based Greek-style yogurt
- 3 garlic cloves, grated
- 1 thumb of fresh ginger, grated
- 1 tsp garam masala
- 1 tsp ground cumin
- 2 tsp turmeric
- Juice of 1 lemon
- Salt and pepper to taste
For serving:
- 280g basmati rice
- Lettuce leaves
- Vegetable oil for cooking
For the coriander yogurt:
- 180g plant-based Greek-style yogurt
- 1 handful fresh coriander
- Juice of 1/2 lemon
Method
- Make the marinade: Mix yogurt, garlic, ginger, spices, lemon juice, salt, and pepper in a bowl.
- Prepare tofu: Break tofu into 3cm pieces and coat with marinade. Refrigerate for 3-4 hours or overnight.
- Cook rice according to package instructions.
- Prepare coriander yogurt: Chop most of the coriander and mix with yogurt, lemon juice, salt, and pepper.
- Thread marinated tofu onto skewers.
- Cook kebabs: Heat oil in a griddle pan or BBQ. Cook kebabs for 2-3 minutes on each side until charred.
- Serve: Plate rice, lettuce, coriander yogurt, and kebabs. Garnish with remaining coriander leaves.
