Ingredients
- 160g wholemeal spelt flour
- 1 tsp ground cinnamon
- 1/2 tsp baking powder
- 4 tbsp cocoa powder
- Pinch of salt
- 6 tbsp maple syrup
- 5 tbsp coconut oil, melted
- 1 tbsp olive oil
- 1 tsp vanilla extract
- 80g 70% dark chocolate
- 1 small handful of white sesame seeds
Method
- Mix dry ingredients:
- Combine spelt flour, cinnamon, baking powder, cocoa powder, and salt in a large bowl
- Add wet ingredients:
- Stir in maple syrup, melted coconut oil, olive oil, and vanilla extract to form cookie dough
- Chop chocolate and mix two-thirds into the dough
- Chill and prepare:
- Refrigerate dough for 30 minutes
- Preheat oven to 180°C fan / 400°F fan
- Line a baking tray with paper
- Shape cookies:
- Divide dough into 9 balls
- Flatten each to 5cm (2″) wide
- Place on baking tray
- Add toppings and bake:
- Press remaining chocolate pieces into cookies
- Sprinkle with sesame seeds
- Bake for 10-12 minutes
- Sprinkle with salt after baking
