Wholesome Spelt Double Chocolate Cookies

Ingredients

  • 160g wholemeal spelt flour
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 4 tbsp cocoa powder
  • Pinch of salt
  • 6 tbsp maple syrup

  • 1 tbsp olive oil
  • 1 tsp vanilla extract
  • 80g 70% dark chocolate
  • 1 small handful of white sesame seeds

Method

  1. Mix dry ingredients:
    • Combine spelt flour, cinnamon, baking powder, cocoa powder, and salt in a large bowl
  2. Add wet ingredients:
    • Stir in maple syrup, melted coconut oil, olive oil, and vanilla extract to form cookie dough
    • Chop chocolate and mix two-thirds into the dough
  3. Chill and prepare:
    • Refrigerate dough for 30 minutes
    • Preheat oven to 180°C fan / 400°F fan
    • Line a baking tray with paper
  4. Shape cookies:
    • Divide dough into 9 balls
    • Flatten each to 5cm (2″) wide
    • Place on baking tray
  5. Add toppings and bake:
    • Press remaining chocolate pieces into cookies
    • Sprinkle with sesame seeds
    • Bake for 10-12 minutes
    • Sprinkle with salt after baking
