Vegan Harissa Aubergine and Vegetable Traybake

Ingredients

  • 2 courgettes (zucchini), sliced
  • 1 onion, diced
  • 2 bell peppers, diced
  • 2 aubergines (eggplants)
  • 3 garlic cloves, chopped
  • 1 can (400g) chopped tomatoes
  • 1 tsp caster sugar
  • 1 sprig fresh rosemary, chopped
  • 2.5 tbsp rose harissa paste
  • 4 tbsp vegan yogurt
  • Olive oil
  • Salt and pepper

Method

  1. Prepare vegetables:
    • Preheat oven to 200°C fan / 425°F fan
    • Mix courgettes, onion, and peppers in a roasting dish
    • Drizzle with oil and season
  2. Prepare aubergines:
    • Slice aubergines lengthways and score flesh

    • Remove aubergines from dish

    • Return to dish and roast everything for 20 more minutes

    • Mix remaining harissa with oil
    • Drizzle over dish with vegan yogurt
