Spicy-Sweet Gochujang Marmalade Tofu

Ingredients

  • 300g extra-firm tofu
  • 1.5 tbsp cornflour
  • 2 tsp vegetable oil
  • Salt to taste
  • 3 tbsp orange marmalade
  • 1 tbsp gochujang
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp maple syrup
  • 1/2 thumb fresh ginger, peeled and grated
  • 140g jasmine rice
  • 1/2 broccoli head, broken into florets
  • Sesame seeds for garnish

Method

  1. Prepare the tofu:
    • Preheat oven to 180°C fan / 400°F
    • Drain and tear tofu into small chunks
    • Pat dry with a clean tea towel
    • Toss with cornflour, oil, and salt
  2. Bake the tofu:
    • Spread on an oven tray
    • Bake for 20 minutes, then flip
    • Bake for another 10-15 minutes until golden and crispy
  3. Make the sauce:
    • Mix marmalade, gochujang, soy sauces, rice vinegar, maple syrup, and ginger
  4. Cook rice and broccoli:
    • Prepare rice according to package instructions
    • Boil broccoli florets until tender
  5. Finish the dish:
    • Heat sauce in a pan until thickened
    • Add crispy tofu and coat with sauce
    • Serve with rice and broccoli
    • Garnish with sesame seeds and extra sauce
