Spicy Harissa Chickpea Flatbreads with Cool Tzatziki

Ingredients

  • 12 radishes, finely chopped
  • 1 lemon
  • Salt
  • Olive oil
  • 2 x 400g tins of chickpeas, drained and rinsed
  • 1/2 cucumber, grated
  • 240g plant-based Greek-style yogurt
  • 1 garlic clove, peeled and grated
  • 3 tbsp rose harissa paste
  • 4 tsp maple syrup
  • 4 flatbreads or gluten-free wraps
  • Fresh parsley leaves

Method

  1. Pickle radishes: Mix chopped radishes with juice from half a lemon and a pinch of salt. Set aside.
  2. Prepare tzatziki:
    • Squeeze water out of grated cucumber
    • Mix cucumber with yogurt, grated garlic, remaining lemon juice, and salt
  3. Cook chickpeas:
    • Heat oil in a pan and fry chickpeas for 8-10 minutes until crispy
    • Add 2 tbsp harissa paste, maple syrup, and salt
    • Cook for 10-15 seconds more

    • Warm flatbreads
    • Spread tzatziki
    • Top with pickled radish and harissa chickpeas
    • Drizzle with a mix of remaining harissa paste and olive oil
    • Garnish with parsley leaves.
