Ingredients
- 12 radishes, finely chopped
- 1 lemon
- Salt
- Olive oil
- 2 x 400g tins of chickpeas, drained and rinsed
- 1/2 cucumber, grated
- 240g plant-based Greek-style yogurt
- 1 garlic clove, peeled and grated
- 3 tbsp rose harissa paste
- 4 tsp maple syrup
- 4 flatbreads or gluten-free wraps
- Fresh parsley leaves

- Pickle radishes: Mix chopped radishes with juice from half a lemon and a pinch of salt. Set aside.
- Prepare tzatziki:
- Squeeze water out of grated cucumber
- Mix cucumber with yogurt, grated garlic, remaining lemon juice, and salt
- Cook chickpeas:
- Heat oil in a pan and fry chickpeas for 8-10 minutes until crispy
- Add 2 tbsp harissa paste, maple syrup, and salt
