Decadent Vegan Chocolate Self-Saucing Pudding

Ingredients

  • 300ml (1.25 cups) hot water

Method

  1. Prepare the oven and pan:
    • Preheat oven to 160°C fan / 350°F
    • Grease a 26cm x 20cm (10″ x 8″) deep cake tin
  2. Make the flax egg:
    • Mix ground flaxseed with 2 tbsp water and set aside
  3. Prepare the batter:
    • Combine dry ingredients in a large bowl
    • Add melted butter, milk, vanilla, and flax egg
    • Fold in chopped chocolate
  4. Assemble the pudding:
    • Pour batter into greased tin
    • Mix remaining sugar and cocoa powder, sprinkle over batter
    • Carefully pour hot water over the back of a spoon onto the pudding
  5. Bake and serve:
    • Bake for 25-35 minutes until a toothpick comes out clean
    • Let sit for 3-5 minutes, dust with cocoa powder
