Simple Shiitake Ramen

Ingredients:

  • 1 shallot, sliced

  • 250g shiitake mushrooms, sliced

  • 1/2 thumb of fresh ginger, chopped
  • 1 tbsp miso paste
  • 1 liter vegetable stock
  • 100g vegan-friendly ramen noodles
  • Salt to taste
  • 300g firm tofu, sliced into squares
  • Cornflour for coating tofu
  • Vegetable oil for frying
  • 1 pak choi, halved and rinsed

Optional toppings: carrot, spring onion, chili oil, and sesame seeds

Method:

  1. Fry shallot and garlic in 2 tsp sesame oil for 5 minutes, then transfer to a blender.
  2. In the same wok, fry mushrooms in remaining sesame oil for 12-15 minutes.
  3. Coat tofu in cornflour and fry in a separate pan until crispy. Add pak choi for the last few minutes.
  4. Cook noodles according to package instructions.
  5. Blend 1/3 of the fried mushrooms with the shallot mixture, ginger, miso paste, and vegetable stock until smooth.
  6. Pour the blended broth into the wok and heat through. Season with salt if needed.
  7. Assemble the ramen: Add noodles to bowls, pour over the hot broth, and top with pak choi, tofu, remaining mushrooms, and your choice of toppings.
