  • 160g (5.6oz) noodles
  • 100g (3.5oz) mushrooms, sliced (Shiitake recommended)
  • 1 red pepper, sliced
  • 4 Tenderstem broccoli, halved lengthways
  • 1 spring onion, sliced

Method:

  1. Prepare the sauce by mixing ginger, 1/2 tsp sesame oil, dark and light soy sauce, maple syrup, and rice wine vinegar in a jar. Shake well and set aside.
  2. Cook the noodles in boiling water until chewy but not soft. Drain and rinse with cold water to stop cooking.
  3. Heat 1 tsp sesame oil in a wok over high heat. Add mushrooms, red pepper, and broccoli. Stir-fry for 3-5 minutes until cooked but still crunchy.
  4. Add the cooked noodles, prepared sauce, and spring onion to the wok. Stir and cook for 30 seconds.
