Sweet Potato Patties

These sweet potato patties are a perfect vegan meal that combines nutrition and flavor. Ingredients:

  • 500g sweet potato
  • 100g bulgur wheat (or quinoa for gluten-free option)
  • 300ml vegetable stock
  • 400g tin of chickpeas, drained and rinsed
  • 1/2 red onion, finely chopped
  • 2 garlic cloves, finely chopped
  • Handful of coriander, chopped
  • 1/2 tbsp smoked paprika
  • 2 tsp ground cumin
  • Salt and pepper
  • 500g baby spinach
  • Hummus for serving
  • 5 tbsp rose harissa paste (optional)

Method:

  1. Preheat oven to 200°C fan / 425°F.
  2. Roast pierced sweet potatoes for 35-45 minutes until soft.
  3. Cook bulgur wheat in vegetable stock for 10-12 minutes, then cool.
  4. Mash chickpeas in a large bowl.
  5. Add peeled roasted sweet potatoes, cooked bulgur wheat, and all other ingredients to the bowl.
  6. Mix well and shape into 10 patties.
  7. Bake patties for 30-40 minutes, turning halfway through.
  8. Let patties cool for 3-4 minutes after baking.
  9. Wilt spinach in a pan.
  10. Serve patties with wilted spinach, hummus, and harissa paste.
