Ingredients:
For the dough:
- 450g strong white bread flour
- 7g fast-action dried yeast
- Salt
- 300ml lukewarm water
- Olive oil
For the filling:
- 70g blanched almonds
- 2 roasted red peppers (from a jar)
- 2 garlic cloves
- 2 tbsp tomato purée
- 1 bunch fresh flat-leaf parsley
- 2 tbsp red wine vinegar
- 2 tsp smoked paprika
- Olive oil
- Salt and pepper
- 50g pitted black olives, sliced
Method:
- Make the dough:
- Mix flour, yeast, and salt in a bowl
- Add water and olive oil, combine into a dough
- Knead for 10 minutes, then let rise for 1 hour
- Prepare the filling:
- Toast almonds in a pan
- Blend almonds with other filling ingredients in a food processor
- Assemble and bake:
- Roll out dough into a rectangle
- Spread filling and sprinkle olives
- Roll up and slice into 12 rolls
- Place in a greased baking tray and prove for 20 minutes
- Bake at 200°C fan for 20-25 minutes
