Romesco Bread Swirls

These delicious bread swirls feature a flavorful romesco sauce filling, perfect for dinner parties or as a tasty snack.

Ingredients:


For the dough:

  • 450g strong white bread flour
  • 7g fast-action dried yeast
  • Salt
  • 300ml lukewarm water
  • Olive oil

For the filling:

  • 70g blanched almonds
  • 2 roasted red peppers (from a jar)
  • 2 garlic cloves
  • 2 tbsp tomato purée
  • 1 bunch fresh flat-leaf parsley
  • 2 tbsp red wine vinegar
  • 2 tsp smoked paprika
  • Olive oil
  • Salt and pepper
  • 50g pitted black olives, sliced

Method:

  1. Make the dough:
    • Mix flour, yeast, and salt in a bowl
    • Add water and olive oil, combine into a dough
    • Knead for 10 minutes, then let rise for 1 hour
  2. Prepare the filling:
    • Toast almonds in a pan
    • Blend almonds with other filling ingredients in a food processor
  3. Assemble and bake:
    • Roll out dough into a rectangle
    • Spread filling and sprinkle olives
    • Roll up and slice into 12 rolls
    • Place in a greased baking tray and prove for 20 minutes
    • Bake at 200°C fan for 20-25 minutes
  4. Serve:
    • Brush with olive oil and sprinkle with chopped parsley
