Ingredients
- 2 courgettes (zucchini), sliced
- 1 onion, diced
- 2 bell peppers, diced
- 2 aubergines (eggplants)
- 3 garlic cloves, chopped
- 1 can (400g) chopped tomatoes
- 1 tsp caster sugar
- 1 sprig fresh rosemary, chopped
- 2.5 tbsp rose harissa paste
- 4 tbsp vegan yogurt
- Olive oil
- Salt and pepper
Method
- Prepare vegetables:
- Preheat oven to 200°C fan / 425°F fan
- Mix courgettes, onion, and peppers in a roasting dish
- Drizzle with oil and season
- Prepare aubergines:
- Slice aubergines lengthways and score flesh
- Rub with oil and season
- Add to dish and roast all vegetables for 20 minutes
- Make the sauce:
- Remove aubergines from dish

- Return to dish and roast everything for 20 more minutes
