Ingredients
- 2 tbsp coconut oil
- 4 garlic cloves, finely chopped
- 1 thumb fresh ginger, finely chopped
- 2 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp ground turmeric
- 200g (1 cup) red lentils
- 1 can (400g) chopped tomatoes
- 750ml (3 cups) vegetable stock
- 1 can (400ml) full-fat coconut milk
- Salt and pepper to taste
- Fresh coriander (cilantro) for garnish
- Red chilli flakes (optional)
Method
- Sauté aromatics:
- Heat coconut oil in a large pot
- Cook garlic and ginger until golden brown (2-3 minutes)
- Toast spices:
- Add cumin, coriander seeds, and turmeric
- Cook until spices smoke and darken (about 2 minutes)
- Add lentils and liquids:
- Rinse lentils and add to pot
- Stir in tomatoes, stock, and 3/4 of the coconut milk
- Bring to boil, then simmer for 20-25 minutes
- Season and serve:
- Add salt and pepper to taste
- Drizzle with remaining coconut milk
- Garnish with fresh coriander and chilli flakes if desired
