Ingredients
- 650g carrots, peeled and chopped
- 1 can (400g) chickpeas
- 1 tbsp ground cumin
- 1 tbsp smoked paprika
- 1.5 tbsp maple syrup
- 2 garlic cloves

- 3 ice cubes
- Fresh parsley, chopped

Method
- Roast the carrots:
- Preheat oven to 200°C fan
- Mix carrots, some chickpeas, spices, maple syrup, and oil
- Roast for 40 minutes, removing garlic halfway
- Prepare the chickpeas:
- Remove skins from remaining chickpeas
- Boil for 15 minutes until soft
- Blend the hummus:
- Process boiled chickpeas until broken down
- Add roasted carrots and process
- Blend in garlic, tahini, lemon juice, salt, and pepper
- Add aquafaba and ice cubes while processing
- Adjust and serve:
- Taste and adjust seasonings
- Process until smooth and creamy
- Serve topped with olive oil, spices, roasted chickpeas, and parsley
