Sweet and Smoky Maple Roasted Carrot Hummus

Ingredients

  • 650g carrots, peeled and chopped
  • 1 can (400g) chickpeas
  • 1 tbsp ground cumin

Method

    • Process boiled chickpeas until broken down

    • Blend in garlic, tahini, lemon juice, salt, and pepper
    • Add aquafaba and ice cubes while processing
  4. Adjust and serve:
    • Taste and adjust seasonings
    • Process until smooth and creamy
    • Serve topped with olive oil, spices, roasted chickpeas, and parsley
