Ingredients

  • 180g baby spinach
  • 1 handful fresh coriander
  • 150g silken tofu
  • 2 tbsp mango chutney
  • Coconut oil
  • 1 tsp cumin seeds
  • 1 red chilli
  • 4 garlic cloves, finely chopped
  • 1 thumb fresh ginger, finely chopped
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1/2 tsp ground cinnamon
  • 2 x 400g tins chickpeas, drained
  • Juice of 1/2 lemon
  • Salt to taste

Method

  1. Prepare the greens:
    • Blanch spinach in hot water for 2 minutes
    • Drain and rinse with cold water
    • Blend with coriander, tofu, and mango chutney
  2. Cook the aromatics:
    • Fry cumin seeds in coconut oil
    • Add half the chilli, garlic, ginger, and spices
  3. Combine and simmer:
    • Add chickpeas and green sauce
    • Stir in lemon juice and salt
    • Heat through for 3-4 minutes
  4. Serve:
    • Garnish with remaining chilli
    • Pair with bread or rice, vegan yogurt, and nigella seeds
