Ingredients
- 180g baby spinach
- 1 handful fresh coriander
- 150g silken tofu

- Coconut oil
- 1 tsp cumin seeds

- 1 thumb fresh ginger, finely chopped
- 1 tsp turmeric
- 1 tsp garam masala
- 1/2 tsp ground cinnamon
- 2 x 400g tins chickpeas, drained
- Juice of 1/2 lemon
- Salt to taste
Method
- Prepare the greens:
- Blanch spinach in hot water for 2 minutes
- Drain and rinse with cold water
- Blend with coriander, tofu, and mango chutney
- Cook the aromatics:
- Fry cumin seeds in coconut oil
- Add half the chilli, garlic, ginger, and spices
- Combine and simmer:
- Add chickpeas and green sauce
- Stir in lemon juice and salt
- Heat through for 3-4 minutes
- Serve:
- Garnish with remaining chilli
