Ingredients

For the hoisin tofu:

  • 400g extra-firm tofu
  • 1 tbsp tomato purée
  • 2 tbsp hoisin sauce
  • 2 tbsp maple syrup
  • 2 tbsp soy sauce
  • 2 tsp sesame oil

  • 1/3 cucumber, sliced
  • 1 lime
  • 1 avocado

Method

    • Bake for 35 minutes total, basting halfway through

    • Mash avocado with lime juice
    • Mix Sriracha and mayonnaise

    • Layer mashed avocado, spinach, tofu, pickled cucumber, and peanuts (if using) on baguettes
